Food provides the body with nourishment and pleasure. To ensure that the food we buy is safe to eat we must develop GOOD HABITS when purchasing, storing and handling food.
Let’s remember:
- Bacteria can’t walk - it is carried or transferred from one place to another.
- Bacteria loves warm moist places.
If we eliminate these two points we have also done our best to eliminate the risk of food contamination.
The following is a checklist in developing GOOD FOOD HABITS:
Buying Food :
- Don’t buy damaged or unsealed tins or packets.
- Check “Use By” dates.
- Always buy perishable & fresh foods last. These include meat, fish, dairy products, cold meats, & fruit & vegetables.
- Don’t buy foods that are stored above the freezer line in freezers. Find out where this line is at your supermarket or deli.
- Keep an esky or foam box in your car for transporting perishable foods. Refrigerate as soon as you arrive home.
Storing Food :
- Never store raw meat, fish or poultry with ready to eat foods such as ham, salami or cheese.
- Always store raw meats in sealed containers so that there is no leakage onto other foods.
- Keep cold meats and cheeses wrapped individually
- Check your refrigerator temperatures at regular intervals-thermostats may need to be adjusted during hot weather.
- Don’t overstock your refrigerator-allow for good airflow around your food.
- Don’t overbuy-it is better to buy fresh.
Handling Food :
- Always wash hands thoroughly before food preparation.
- Keep “pets” out of the kitchen – including flies
- Have separate cutting boards for raw meats. These should be sterilised with bleach or sanitisers.
- Wash and dry meat knives thoroughly, sanitise if possible.
- Wash fruit and vegetables thoroughly before eating.
